Hartman, I., Vyzkumny Ustav Pivovarsky a Sladarsky, Brno (Czech Republic). Sladarsky Ustav
This study evaluates the quality of malting barley harvested in the Czech Republic in 2010 as well as the quality of malt and wort. Due to unfavorable weather conditions during harvest, physiological damage and black tips occurred in barley seeds. Protein concentrations were average, starch concentrations were above the average. Most of the malt quality charactersistics attained normal values. Higher wort haze values, longer saccharification time and higher malt gushing potential than optimal were determined.
