This study was conducted to determine the change of hydrogen ion concentration, viscosity and free sugars in the water-soluble mucilage of Ulmus coreana and Nakai root which was stored at 10 deg C. Hydrogen ion concentration in the mucilage changed ph7-pH4-pH6 or 7. The viscosity of mucilage decreased very slowly. The hydrolyzed products of mucilage consisted of rhamnose, mannose, galactose, arabinose, xylose, glucose and galacturonic acid.
