Electrical stimulation of 500 volts (DC) for 3 minutes could improve the tenderness of Longissimus dorsi and Biceps femoris muscles from mature beef carcasses and ageing. No significant difference was observed between stimulated and unstimulated Semitendinosus and Trapezius cervicis muscles from mature beef carcasses but ageing of electrically stimulated Semitendinosus muscle improved tenderness.
