[Effect of the sterilization conditions on the biological value of new types of canned fruits]

Effect of sterilization conditions and parameters on vitamin content in the new types of fruit juices is studied and results are presented. Analysis of vitamin C and beta-carotine content in the canned juices shows that the sterilizing method offered is an optimum one. It allows to keep biological and nutritive value of the juices
