Artificial sweeteners and sugar-substitutes

The constant increase of the number of diabetes patients, the avoidance of obesity - caused by the unnecessarily high intake of energy - and also the reduction of dental caries have mentionably increased the use of artificial sweeteners and sugar-substitutes in the production of foodstuffs. Mention must be made of certain economic considerations which have also contributed to it. This article gives a brief survey of these new sweeteners and of some technological problems in respect of their use.
