Chinese. 牛初乳是指奶牛产犊后几天内所分泌的乳汁,含有丰富的营养成分。目前已在初乳中测出50余种酶,它们具有重要的生物功能。因此,牛初乳不仅是新生幼儿及仔畜最理想的食品,也是优良的纯天然保健食品。笔者介绍8种牛初乳中存在的酶,并对其功能和酶活力变化作简要阐述。
