ITALIANO: I prodotti ittici hanno in questi ultimi anni raggiunto nuove nicchie di mercato, grazie ad un migliore sfruttamento delle risorse del mare e all'incremento delle produzioni connesse all'idrocoltura. I prodotti ittici sono pero' altamente deperibili ed e' per questa ragione che e' necessario preoccuparsi anche degli aspetti igienico-sanitari, tema di questo articolo.

English. Fish products have reached new corners of the market over the last few years, thanks to a better exploitation of marine resources and an increase in production connected with hydroculture. Fish products are however highly perishable and therefore it is necessary to be concerned about health aspects, and this is the theme of this article.
