ITALIANO: I prodotti ittici hanno in questi ultimi anni raggiunto nuove nicchie di mercato, grazie ad un migliore sfruttamento delle risorse del mare e all'incremento delle produzioni connesse all'idrocoltura. I prodotti ittici sono pero' altamente deperibili ed e' per questa ragione che e' necessario preoccuparsi anche degli aspetti igienico-sanitari, tema di questo articolo.

Fish products are however highly perishable and therefore it is necessary to be concerned about health aspects, and this is the theme of this article.
