This document came out of a workshop hosted by the Caribbean Agricultural Research and Development Institute and the Department of Agriculture in St. Kitts in February 1995 to provide basic training to farmers, extension officers and other interested parties on post harvest handling. It provides clear and simple guidelines on the benefits of storage, the impact of poor storage methods and how to maintain produce quality. Profiles on the handling of commodities such as tomato, sweet pepper, cucumber, green beans, broccoli, lettuce, carrot, onions and watermelon are also provided.
