The underlying principles of the microbiological safety assurance system are that microbiological testing is an essential complement to traditional sight, smell, and touch inspection of facilities; that microbial indices are useful in the evaluation of procedure integrity in food process and preparation; and that attainable upper control or warning limits can be established to provide a margin of safety and quality allowing correction without hazard or dissatisfaction.
