Extract: This article presents a review of the chemistry and definitions of dietary fiber and the problems and limitations of current methodologies used for quantifying fiber in foods. A provisional table on the dietary fiber content of 126 foods commonly consumed in the United States is included. The table was compiled from an extensive evaluation of literature values.(author)
