The effect of heat treatment on redberries puree yield, changes of some important physico-chemical characteristics and possibilities of mixed nectar production were investigated. It has been found that preheating of redberries and additional disintegration of strained pulp influenced the yield, consistency and puree quality.It is established that mixing of redberry and apple purees in fixed proportions improves its flavour qualities. A recipe for the production of redberries and apple mixed nectar was presented.
