Influence of mineral additives on micro-flora of the bread dough

The possibility of problem decision of macro- and microelements deficiency by manufacturing functional flour foodstuffs is investigated in this article. Complex food mineral additives of the Dopinat type are offered as a fortifier. Food additives contain a number of required mineral substances. The influence of various concentrations of mineral additives of the Dopinat type on microflora of the bread dough was investigated.
