Many ways to merchandise coffee are noted using examples chosen from a broad spectrum of food service operations. Various coffee products available to restauranteurs and innovations in coffee processing are described. Proper brewing is most important in order to achieve a delicate flavor and pleasing aroma. This requires fresh, cold water, a good quality coffee in the right amount and the correct temperature for brewing. Customer's expectations for coffee are tabulated in terms of consumer complaints about coffee consumed away from home. (emc).
