Inglés. In this research, 10 samples of boza supplied from markets were analyzed to determine biogenic amine content. Biogenic amines of boza samples were derivatized by benzoyl chloride and the quantification was performed by using C18 column and absorbance detection at 254 nm at HPLC.

Bu araştırmada piyasadan temin edilen 10 farklı bozanın biyojen amin içerikleri, benzoil türevleri oluşturularak, C18 kolon ve absorbans dedektörün (254 nm) kullanıldığı HPLC cihazında belirlenmiştir. Boza örneklerinin biyojen amin içerikleri belirlenirken standart katma tekniği uygulanmıştır.
