The role of polysaccharide-chain attachment to lysozyme in the excellent emulsifying properties of polymannosyl lysozyme

Polymannosyl lysozyme (G49N) constructed by genetic engineering has high emulsifying ability to make excellent emulsion even in low concentrations. It is probable that polymannosyl lysozyme can be used in industrial applications, because of the high emulsifying properties at low concentration. The polymannosyl chain without attaching to lysozyme did not have emulsifying ability to make excellent emulsion. It is elucidated that the polysaccharide-chain attachment to lysozyme is essential for the dramatic improvement in emulsifying property of lysozyme.
