Physicochemical Analysis of Water Quality of Brook Kuruçay Texto completo

In this study, through the analyses of water samples taken from 9 stations on the brook between July 2012 and June 2013, we aimed to determine the monthly and seasonal changes in water quality parameters of Brook Kuruçay, to determine the water quality properties, to reveal the pollution problems, to determine the suitability level in terms of aquatic life and to classify the quality of water in accordance with Surface Water Quality Management Regulation’s Inland Surface Water Classes criteria. The study area is located southeast of the Hafik District of Sivas city and the altitude is 2608 m. The water samples were collected from 9 stations established on the brook, and some physicochemical parameters and heavy metal concentrations were analyzed in water samples. The cleaning and maintenance of all of the equipment, land-type measurement tools, and glass sampling containers to be used in sampling were made 1 day before sampling. Sampling tubes were immersed into 15 cm below the water surface for taking water samples. Heavy metal concentrations were determined in the Sivas Provincial Control Laboratory in the same day with sampling (within 5 hours). The total alkalinity, total hardness, ammonium nitrogen, nitrite, nitrate, ammonium azote, phosphate, sulfite, sulfate, chloride, sodium, potassium, suspended solid matter (SSM), chemical oxygen demand (COD), biological oxygen demand (BOD), calcium, magnesium, ferrous, lead, copper, zinc, nickel, mercury and cadmium analyses of water samples were performed. As a result of the analyses, it was determined that, since Brook Kuruçay falls into the water resource class, which is the most sensitive to pollution, the water quality of the brook should be monitored regularly.

In Turkey, there are 31.1 million head sheep in 2014. Central Anatolia Region has 8.3% of this total number. Nigde is the most important sheep producer province in this region. In this study it is aimed to determine marketing structure of products obtained from sheep production activities, define problems of it and present solutions for these problems. The main material of the research was consisted of primary data obtained from 39 Akkaraman sheep producers in Çamardı district in Nigde. In the sheep farms, milk production yield was 1374.4 kg per year. As 73.5% of this yield was presented to market, rest of it was used for self-consumption. Milk was generally sold to local traders. In the operations, livestock also was sold. When 89.7% of livestock sold to kasaps 10.3% of it was sold to local traders. It can be said that producers who are the members of cooperatives were very low and 51.3% of the producers stated that cooperatives can be useful for the solutions of marketing problems of sheep products. Main expectations of producers from cooperatives were providing them market alternative, providing easiness for processing of products and leading to increasing numbers and kinds of buyers in the market.

Using of edible mushrooms which are generally consumed in houses in dried form is based on mainly instant soup and sauce formulations. Recently, the cultivations of Agaricus bisporus and Pleurotus ostreatus species have become widespread. Utilization of these cultivated mushrooms in recipes would bring added value to related food products. For this purpose, Agaricus bisporus and Pleurotus ostreatus species farmed in Osmaniye Korkut Ata University Mushroom House were dried and then pulverized. Firstly, a snack was prepared with Agaricus bisporus powder. Agaricus bisporus powder was substituted for wheat flour at the rates of 5 %, 10 %, 20 % and 30 % and thus the potential of food product which had relatively lower carbohydrate and fat level and higher fiber content was investigated. In the second part of the study, either 5 %, 10 % of Agaricus bisporus powder or 5 %, 10 % of Pleurotus ostreatus powder were added into traditional Turkish meatball (beef mince, salt) which was cooked in conventional oven, so meat flavor could be replaced by herbal flavor coming from mushroom. This property mat obey the purpose that, the created new product will be consumed fondly especially by children. Sensory and physical (colour and texture) analysis were performed in both snack and meatball samples and the results were evaluated statistically.

This study was conducted to assess the effect of drying methods and pre-treatments on nutritional content and sensory quality of dried fish. The experiment was conducted in factorial arrangement of 2×3×2 with two drying methods (sun and oven drying), three fish species (tilapia, cat fish and carp) and two preservatives treatment (garlic and ginger juice) laid out in Completely Randomized Design (CRD). Fresh fillets were analysed for their nutritional value and sensory quality. The compositions of the fresh fillets were 6.50-7.59% for ash, 74.20-76.67% for protein, 8.06-9.09% for fat and 8.47-9.12% for total carbohydrates. Drying reduced the moisture contents from 74.74-75.81% to between 7.76-8.25%, making it safe for storage. The ash content changed from 7.11 to 7.34 and from 6.50% to 6.34% for cat fish and tilapia, respectively, with statistical significance whereas no change was observed in carp with 7.60% because of drying. Drying method had no difference in ash and protein contents while increase in fat from 7.75 to 9.44% and a decrease in carbohydrate from 9.37 to 8.13% were observed in sun dried samples than that of oven dried fillets. This study showed that nutritional values of dry fish did not statistically changed during storage period of 3 months.

Non-dairy probiotic functional foods are receiving considerable interest recently owing to the inability to cause allergy in certain segments of the population. Studies on probiotication were carried out to determine the suitability of kunun-zaki as food matrix for production of probiotic beverage using single and mixed culture of Pediococcus acidilactici KU7, Pediococcus pentosaceus CREC5 and Lactobacillus rhamnosus GG. Probioticated and un-probioticated kunun-zaki samples were designated PKZ and UPKZ, respectively. There was a significant difference in the viable count during storage. Viable counts of the LAB strains decreased with increasing storage time with P. acidilactici KU7 having the highest viability at the beginning and end of storage (3.43 ± 0.06 and 0.93± 0.12 x108 cfu/ml). There was a decrease in pH of the PKZ samples within the 1st and 3rd week with corresponding increase in lactic acid production (71.16 ± 0.01 – 441.39 ± 0.01). Marked increase in pH and a decline in lactic acid were observed at the 4th week of storage in all samples. Total soluble solids content of the beverage was observed to decrease with increasing storage time ranging from 8.25 ± 0.01-4.97± 0.01. There was no significant difference in pH and total soluble solids of UPKZ and colour of the PKZ and UPKZ samples during storage. All the PKZ samples were able to inhibit the growth of selected pathogens with marked variability amongst the samples. The UPKZ sample also showed slight inhibitory activity. The samples showed a decline in proximate and mineral composition at the end of storage. Sensory evaluation showed the PKZ samples were preferred over the UPKZ samples. This study shows that probioticated kunun-zaki can serve as a suitable non-dairy alternative to dairy probiotic formulations and would be of health benefits to potential consumers.

Textural characteristics, color and fructooligosaccharides (FOS) content, in yacón root products (syrup and dried snack subjected to different pretreatments with NaCl, blanching and ascorbic acid) were evaluated. Yacón from Salta Capital, with 8 months of growth were used. Texture profiles and Color were evaluated instrumentally and FOS content by HPLC. There were significant differences between the samples treated with NaCl and the ones treated by blanching and ascorbic acid for fracture strength, fracture number and hardness according to pretreatment used, and for hardness and tackiness by the drying time. Regarding to color: longer drying time reduces sample brightness. In processed products the FOS content is lower than in fresh yacón, but higher in sucrose, glucose and fructose.

The impacts of extension contact on income of farmers have been examined with a view to evaluate the agricultural extension services in Bangladesh. The scope of the study was ten villages of Gazipur of Bangladesh. The objective of the study is to identify the effect of extension contact on crop income, livestock income, fisheries income, miscellaneous income, total agricultural income, nonagricultural income and total income of farmers. The sample of the study consists of 1000 farmers. Data came from field survey and multistage random sampling technique was used for the collection of data. The results indicated that the impacts of extension contact coefficients on crop income, nonagricultural income are positive and significant. However, the impacts of extension contact coefficients are not significant in the cases of livestock, fisheries, miscellaneous and agricultural incomes. But it does not mean that agricultural extension has no reward in Bangladesh. The sample data indicates that the impact of extension contact on total income of farmers is positive and significant. The study concludes that agricultural extension is necessary to raise the income of farmers.

The aim of this study was to detect Staphylococcus aureus contamination to different types of animal origin foods collected in the Kırşehir province of Turkey and to examine their enterotoxin production ability. Out of 120 food samples 38 suspected colonies were obtained and 23 of them were identified as S. aureus by biochemical and molecular analyses. Other species detected were S. chromogenes, S. cohnii ssp. cohnii, S. hominis, S. lentus, S. warneri, and S. xylosus. The isolates were also analysed with regard to carry mecA gene. None of them was found to have mecA gene indicating susceptibility to methicillin. To determine the enterotoxigenic ability of the isolates phenotypically, reversed-passive-latex-agglutination test against SEA-SED was used. Six out of 23 S. aureus isolates were determined to produce SEA, SEC and SED. Three of them had only one enterotoxin production, whereas others had SEA and SED production together. The results of phenotypic analyses were confirmed by PCR based examination. None of the coagulase-negative staphylococci were found to be enterotoxigenic by both phenotypical and PCR-based analyses. In conclusion, enterotoxigenic S. aureus is a risk in foods of animal origin in Kırşehir and its counties.

A two-year field study (2013−2014) was performed to evaluate phytochemical content and antioxidant activity of two high-lycopene tomato breeding lines (HLT-F71 and HLT-F72) grown under open field conditions as compared to the traditional cultivar (cv) Rio Grande. Two open-field trials were conducted in 2013 and 2014. Three tomato cvs were used: two high-lycopene tomato advanced breeding lines (HLT-F71 and ‘HLT-F72’) (F7 generation), and the open-pollinated cv Rio Grande commonly grown in Tunisia. Regardless the growing years and cvs, lycopene content ranged from 98.8 to 280.0 mg/kg fw, total phenolics from 176.1 to 831.8 mg GAE/kg fw flavonoids from 169.7 to 552.1 mg RE/kg fw and total vitamin C from 183.4 to 370.0 mg/kg fw. Significant year-to-year variability was only detected in total phenolics and flavonoid content. No significant year-to-year variability in antioxidant activity was detected in high-lycopene lines. Disregarding the cv, tomato berries harvested on July 2014 had 143% - 224% higher total phenolics and 8% to 47% higher flavonoid contents compared to tomato berries harvested on July 2013. However, disregarding the cv, tomato berries harvested on July 2013 had 6% -17% higher lycopene and 8% -21% higher LAA compared to berries harvested on 2014. During the second growing year, the higher temperature, particularly prior to harvest, determined a decrease in lycopene content and a significant increase in total phenolics regardless the cv. Although the huge variability in total phenolics and the decrease in lycopene content during the second harvest, the antioxidant activity was not affected by year-to-year variability. This reveals consistent functional quality of these cvs and minimal genotype*environmental conditions interaction.

The maize germplasm variation is valuable for breeders to develop elite hybrids with increased mineral contents in the maize grain to eliminate mineral malnutrition, which is referred as HIDEN HUNGER. Therefore, we aimed to determine mineral element diversity of maize landraces collected from different geographical regions of Turkey. There was huge diversity for all mineral traits and other quality traits. Turkish maize landraces showed high variation for Zn (17-41.34 mg kg-1), Fe (13.52-29.63 mg kg-1), Cu (0.77-3.34 mg kg-1), Mn (5.68-14.78 mg kg-1), Protein (6.6-11.6%), starch content (73.3-80.0%), oil content (3.15-4.7%) and thousand grain weight (177.0-374.9g). There were significant positive and negative associations among mineral elements and quality traits. The principal component analysis differentiated some maize landraces from the rest, and these diverse landraces could be used in the maize breeding program with biofortification purpose.
