New Bulgarian enzyme preparation used in the production of beer

Examinations have been carried out of the new Bulgarian hydrolytic preparation "Trichocease SU-2" used in the production of beer with unmalted barley. The enzyme preparation may be added at different stages of the production process. It accelerates the pressing out of the beer must, increases the boiling output and improves the content of the beer must and the beer itself.
