The effect of temperature during the last four hours of fermentation, and agitation on ethanol production, sugar utilization, biomass production, activity, viability and on chemical composition of a local strain of the yeast Saccharomyces cerevisiae were investigated, using date extract as a natural medium in a 14 liter fermenter. In addition the effect of inducer concentration, temperature, pH, agitation and nitrogen source on the production of extracellular proteases by this yeast was studied
