Various kinds of carbohydrate substrate such as broken rice, corn seed, millet, bread, soybean, green gram, yam, cassava and potato were used for fermentation of Monascus kaoliang. It was found out that kind of carbohydrate had some effect on growth, pigmentation as well as sporulation of Monascus Kaoliang.
