The stability of grain quality properties of eleven common spring wheat cultivars has been studied in time (1990-92) and space (Saratov, Krasny Kut, Yershov). The experiments allowed to reveal cultivars ecologically tolerant by such properties as the grain test weight and glassiness, the gluten content and quality, the DDS-sedimentation, and the dough dilution
