The Swiss production of soft and semi-hard cheese is currently challenged by domestic and foreign policies, which call for adaptation of processes. Based on an analysis of the cheese manufacturing industry, the driving forces of competition are investigated. Emphasis is laid on the cheese production and cost structure. Under consideration of legal conditions, market opportunities are evaluated and proposals made for the adjustment of marketing and export strategies in a changing international trade environment.
