Effect of dietary supplement of oil enriched in n-3PUFA and sodium ascorbinate in mixtures for fatteners on the content of fatty acids and sensoric evaluation of meat

It was found that n-3PUFA enriched mixture affected the increase of PUFA level in muscle tissue and sodium ascorbinate enhanced the discussed process. Any deterioration in sensoric evaluation of meat and of bulion, produced from this meat, was not observed
