It was observed that supplement of oil in mixtures for fatteners had an influence on the increase of polyunsaturated fatty acids content (PUFA) in backfat and also on the rise in concentration of malonic dialdehyde (MDA) in blood serum and TBA-RS level in back fat stored for 3 months. Sodium ascorbinate, as being added to the mixtures did not have any effect on differentiation of the indices of fat oxidation, determined in backfat
