The physical behaviour of palm oil depends on the tempering and other treatment it undergoes. This paper aims to study the effects of modifications in processing on the physical behaviour of palm oil. The physical behaviours studied include solid fat content profile by NMR, thermograms by DSC and also microscopic observation, with emphasis on the crystallisation and melting behaviour of the processed samples upon storage
