Fruits of different blueberry cultivars (Bluecrop, Collins, Earlyblue, Goldtraube, Herbert, Ivanhoe) differed in their chemical composition and their physical properties. All the cultivars proved highly suitable for freezing. The rate of freezing did not influence the quality of frozen product. The colour of frozen blueberries depends on the anthocyanins content in fruits
