We investigated the effect of ethanol on the production of cellulose and acetic acid fermentation by Gluconacetobacter persimmonensis KJ145. Results showed that bacterial cellulose productivity was highest when 2 ethyl alcohol was added to apple-huice medium. For acetic acid production, 7 ethyl alcohol was needed.
