Do we appreciate yeast enough?

In the collections of brewing yeasts, a great number of yeast strains is kept, frequently originating from breweries no more existing. The Research Institute of Brewing and Malting (Czech Republic) has built a production line preparing compressed yeasts with a very good stability. A shelf life time of up to 3 weeks can be granted at storage temperatures around 0 deg C. The quality of the different yeast strains during storage was evaluated using flow cytometry.
