We investigated the possibility to apply Fourier trasformed infrared spectroscopy and Fourier transformed near infrared spectroscopy in mash analysis. The main compounds determined in the mash were ethyl alcohol, calcium lactate, glucoe, fructose and dry matter content. The infrared spectroscopy was a quick and relatively accurate method to control the ethyl alcohol manufacturing process.
