Activity of inhibitors of trypsine and the content of total and phytine phosphorus, total protein, bulging sugars, saponins and glucosides: vicine and convicine in the pea, bean and soybean seeds (Polish varieties) and of the small-seed bean is analysed. Quantitative changes of these substances during ripening of the seeds are determined.
