The activity of 4 enzymes in the blood serum of pigs after slaughter was estimated. The pH value below 6.0 in the meat of 8.0% of pigs coming from commercial piggeries and of 2.0% of those coming from the industrial fattening farms was observed. The highest diagnostical value of creating phosphokinase test for the pork quality estimation was stated
