Abstract: This report presents the nutrient content of selected fruits and vegetables in raw, processed, and prepared forms. The foods examined are apples, sweet potatoes, spinach, peas, squash, lima beans, and carrots. A history of each crop, methods of preparing each food, and a variety of nutrition data is provided.
