The financial management process at Bellaire General Hospital, Houston is explained in order to help other food service administrators in their management of food service finances. The first step in the process at the 170 bed hospital is the formulation of a budget using four source documents. Detailed recordkeeping to support control is required. Accurate production sheets are needed for each kitchen area. The hospital uses manual tallying in the ordering of food. Certain alternatives for containing costs are described.
