Utilization of water from dry coconuts to produce long-life coconut water, using a 20% mixture of green coconut water in order to reach the quality standard demanded by Brazilian customers, has been done since 2000. That is one more alternative for the by products from Cocos nucifera L. processing industries, introducing marketing advantages like: better storage, longer shelf life, transportation, and visual quality to the customer. Packed with ultrasonic Swedish technology, coconut water has been already commercialized in establishments in Southeastern Brazil. In this work, carbohydrate contents of four coconut water brands and the natural coconut water were comparatively analyzed, and the contents of fructose, glucose, sucrose, total sugars, and reducing sugars were determined. The coconut water used in this research was bought in Lavras, Minas Gerais St., as well as the green coconut water, which was used as a control. The statistical design was completely randomized, and the treatments were five brands with five replicates. The analyses were performed in the Biochemistry laboratory, of UFLA's Chemistry Department. Two out of four commercial brands, brands B and D, did not achieve the quality standards cited in the literature. | O aproveitamento da água de coco seco, para a produção de água de coco longa-vida com uma mistura de 20% de água de coco verde, para atingir o padrão de qualidade exigido pelo consumidor brasileiro, vem sendo utilizado desde 2000. Trata-se de mais uma alternativa para as indústrias de processamento dos produtos derivados dos frutos de Cocos nucifera L., apresentando vantagens mercadológicas como: facilidade de estocagem, maior vida de prateleira, transporte e exposição ao consumidor. Embalada com tecnologia sueca ultra-sônica, já está sendo comercializada em estabelecimentos de gêneros alimentícios também na região sudeste do Brasil. Com este trabalho, analisou-se comparativamente o teor de glicídios de quatro marcas de água de coco, comparadas com o coco natural, determinando frutose, glicose, sacarose, açúcares totais e açúcares redutores. As águas de coco são comercializadas na região de Lavras - Minas Gerais, bem como o coco verde utilizado como controle. O delineamento experimental utilizado foi o DIC, com os tratamentos dispostos num esquema cinco marcas e cinco repetições. As análises dos glicídios foram realizadas no laboratório de Bioquímica do Departamento de Química da Universidade Federal de Lavras. Das quatro marcas estudadas, a marca B e D não se encontra dentro dos padrões citados na literatura.

Yacon roots contain inulin, which has prebiotic properties and it may be used as sucrose or fat substitutes. However, inulin is very soluble in water. The loss of this important nutrient during blanching is caused mainly by diffusion or leaching, which might be diminished if blanching temperature - time conditions are correctly employed. The aim of this study was to determine the leaching of the sugars inulin, glucose and fructose, present in yacon roots, during hot water blanching under different time/temperature conditions. The samples were cleaned and peeled and cut into geometric forms of 1.75 ± 0.35 mm thick disks. A complete factorial experimental design was used, and the treatments of the samples were compared using the Tukey test. The results indicated that the time and temperature were significant in the dissolution of the sugars. The lowest inulin losses occurred at temperatures and times lower than 60 ºC and 3 minutes. For all temperatures, the lowest glucose and fructose losses were obtained at time lower than 3 and 5 minutes, respectively. | As raízes de yacon contém inulina, o qual possui propriedade prebiótica e pode ser usado como substituto de sacarose ou gordura. Entretanto, a inulina é solúvel em água. As perdas desse nutriente durante o branqueamento são causadas, principalmente, por difusão ou lixiviação, o qual pode ser diminuído se as condições de tempo e temperatura são corretamente empregadas. Objetivou-se neste trabalho, foi estudar a lixiviação, durante o branqueamento em água quente em diferentes condições de tempo e temperatura, dos açúcares inulina, glicose e frutose presentes na raiz do yacon. As amostras foram previamente limpas, descascadas e cortadas na forma geométrica de disco de 1,75 ± 0,35 milímetros de espessura. Os resultados indicaram que o tempo e a temperatura foram significativos na dissolução dos açúcares. As menores perdas de inulina ocorreram à temperaturas e tempos menores que 60 ºC e 3 minutos, respectivamente, enquanto que as menores perdas de glicose e frutose, para todas as temperaturas, foram obtidas para tempos menores que 3 e 5 minutos, respectivamente.

Water soluble pentosans (WSP) from doughs and breads made with different enzyme preparations are characterized according to extraction yield, sugar composition, xylose/arabinose ratio and molecular weight (MW) distribution. Extraction yield was greater for dough than for bread samples, ranging from 0.94 to 1.64%, but bread extracts had a higher purity. Percent of pentoses in purified WSP was greater in pentosanase supplemented samples (28-55%) than in control and amylase containing samples (23-32%). Major sugars were xylose and arabinose, but glucose and mannose also appeared in the extracts. The xylose/arabinose (Xyl/Ara) ratio was 1.3-1.6 and underwent small changes during processing. Enzyme addition caused an increase in Xyl/Ara ratio, attributable to a debranching of arabinoxylans (AX) with higher degree of Ara substitution by arabinofuranosidase. Addition of pentosanases had a significant effect in increasing WSP with MW over 39 000, whereas those of low MW changed only slightly. MW distribution depended on enzyme source, and whereas some enzymes showed activity during fermentation others increased their activity during baking. No synergistic effects were observed in studied variables due to the combination of amylases with pentosanases. Protein in WSP extracts eluted together with ferulic acid suggesting they were linked, but not associated with a determined carbohydrate fraction.

Testou-se a ação de diferentes concentrações de cloreto de sódio, benzocaína e óleo de cravo-da-índia na sobrevivência de alevinos e juvenis de tilápia (Oreochromis niloticus), linhagem chitralada, por 5 horas visando ao transporte. Utilizaram-se 1.350 alevinos (9,74 ± 0,04 g e 6,79 ± 0,01 cm) e 270 juvenis (29,6 ± 0,06 g e 11,52 ± 0,01). Os peixes foram mantidos em jejum por 24 horas em quatro caixas de amianto (500 L) com aeração constante. Em seguida, os peixes foram distribuídos em 54 sacos plásticos, capacidade para 5 L e mantidos em soluções de: cloreto de sódio nas concentrações de (0; 4; ou 8 g/L), benzocaína (0; 20; ou 40 mg/L) e óleo de cravo (0; 2; ou 5 mg/L). O delineamento foi em blocos casualizados, com três repetições, em arranjo multifatorial, com três fatores: substâncias, peixes e concentrações de cada substância em estudo. Mensuraram-se, no início, os parâmetros oxigênio dissolvido, temperatura, pH, salinidade e amônia e, ao final do experimento, a glicose dos peixes. Maiores níveis de glicose foram registrados nos juvenis mantidos na água com óleo de cravo e cloreto de sódio. Não foi observada diferença significativa na sobrevivência entre os tipos de peixes e as substâncias. Entretanto, as dosagens de cloreto de sódio e benzocaína ocasionaram diferenças significativas na taxa de sobrevivência. A sobrevivência foi baixa nos alevinos com 0 g/L de cloreto de sódio e diferiu das dosagens 4 e 8 g/L. O óleo de cravo promoveu resultados similares, em todas as dosagens e substâncias, de taxas de glicose. Ao final do experimento, a sobrevivência foi satisfatória, com média geral de 97,26%, comprovando que as três substâncias podem ser usadas no transporte de alevinos e juvenis durante 5 horas. Água-mel is a honey-based traditional product typically produced in southern Portugal. The evolution of some parameters during its production using two distinct containers (aluminium and stainless steel with a water cooling system) and two heating sources (gas heating and electricity) were evaluated. All parameters, except moisture, increased over time, reaching a ‘plateau’ after 8 h of heating. Moisture, free acidity, HMF (hydroxymethylfurfural), colour, melanoidins, phenols and glucose depended on the producer and procedure for obtaining água-mel. Kinetic parameters and correlation coefficients were determined. In general, changes in parameters during água-mel production followed zero- and/or first-order kinetics, depending on the producer and heating system.

Aim: To study the effects of drinking 0.5 L of two sodium-rich bicarbonated mineral waters (BMW-1 and 2), with a standard meal, on postprandial insulin and glucose changes. And to determine, if the effects vary depending on insulin resistance, measured by homeostasis model assessment (HOMA). Methods: In a 3-way randomized crossover study, 18 healthy postmenopausal women consumed two sodiumrich BMWs and a low-mineral water (LMW) with a standard fat-rich meal. Fasting and postprandial blood samples were taken at 30, 60 and 120 min. Serum glucose, insulin, cholesterol and triacylglycerols were determined. Insulin resistance was estimated by HOMA and insulin sensitivity was calculated by quantitative insulin sensitivity check index (QUICKY). Results: Glucose levels did not change. HOMA and QUICKY values were highly inversely correlated (r = -1,000; p < 0.0001). Insulin concentrations showed a significant time effect (p < 0.0001) and a significant water x time interaction (p < 0.021). At 120 min insulin levels with BMW-1 were significantly lower than with LMW (p = 0.022). Postprandial insulin concentrations showed significantly different patterns of mineral water intake depending on HOMA n-tiles (p = 0.016). Conclusion: Results suggests an increase in insulin sensitivity after BMWs consumption. This effect is more marked in the women, who have higher HOMA values. These waters should be considered part of a healthy diet in order to prevent insulin resistance and cardiovascular disease.<br>Objetivo: Estudiar los efectos de la ingesta de 0.5L de dos aguas minerales bicarbonatadas ricas en sodio (BMW-1 y 2), junto con una comida estándar, sobre los cambios en la insulina y la glucosa postprandial; y determinar si los posibles efectos varían en función de la resistencia a la insulina evaluada a través del modelo homeostático (HOMA). Métodos: 18 mujeres postmenopáusicas sanas participaron en un estudio triple cruzado aleatorizado, en el que bebieron 2 aguas minerales bicarbonatadas ricas en sodio (BMW-1 y 2) y un agua mineral débil (LMW) junto con una comida estándar rica en grasa. Se tomaron muestras de sangre en ayunas y postprandiales a los 30, 60 y 120 min. Se determinó glucosa, insulina, colesterol y triglicéridos en suero. La resistencia a la insulina fue estimada a través del HOMA y la sensibilidad a la insulina se calculó mediante el índice de sensibilidad cuantitativa a la insulina (QUICKY). Resultados: Los niveles de glucosa no presentaron cambios. Los valores de HOMA y QUICKY presentaron una fuerte correlación inversa (r = -1,000; p < 0,0001). Las concentraciones de insulina mostraron un efecto significativo en el tiempo (p < 0,0001) y una interacción agua x tiempo significativa (p < 0,021). A los 120 min los niveles de insulina fueron significativamente inferiores con BMW1 respecto a LMW (p = 0,022). Las concentraciones postprandiales de insulina mostraron patrones significativamente distintos según el tipo de agua que se bebía dependiendo de los n-tiles del HOMA (p = 0,016). Conclusión: Los resultados sugieren un aumento de la sensibilidad a la insulina tras el consumo de las dos aguas minerales bicarbonatadas ricas en sodio. Este efecto es más marcado en las mujeres que tienen unos valores de HOMA más altos. Este tipo de aguas deberían ser consideradas como parte de una dieta saludable con objeto de prevenir la resistencia a la insulina y las enfermedades cardiovasculares.

This study was conducted to produce water-soluble polysaccharide extracts (WSP) from perilla seed meal (PSM), a by-product of perilla seed oil extraction, using enzymatic hydrolysis. The aim was to confirm the potential of this method to obtain functional materials from PSM. The cellulose and hemicellulose fractions from PSM were hydrolyzed using Celluclast 1.5 L and Viscozyme L, respectively. The yield of WSP from both fractions increased with an increase in hydrolysis time. Physical properties of WSP, including solubility, oil-holding capacity, and emulsification properties, were increased by enzymatic hydrolysis. WSP produced by hydrolysis had greater antioxidant activity than WSP obtained without hydrolysis; the highest activity was observed after a hydrolysis reaction of 24 h. WSP retarded glucose and bile acid absorption. The data indicate that WSP from PSM have potentially valuable functional and biological activities.
