Concentration change of reduced glutathione in brewer's yeast has been followed during beer fermentation. Reduced glutathione (GSH) is determined by Ellman's reagent 5,5'-dithiobis-(2)-nitrobenzoic acid) using the modified method for its determination in blood. The decrease in concentration of GHS was observed during the three days of fermentation. After the storage of pitched yeast at low temperature the concentration of reduced glutathione in cells has increased.
