Determination of saponins in Philippine indigenous food legumes

Saponin content in mature seeds of seven legumes ranged from 0.09 to 0.44%. Sam-samping [Mucuna pruviens] had the highest content of 0.44%. In mature pods, saponin ranged from 0.17 to 1.63%. Batao [Dolichos lablab] pods had high levels (1.00 to 1.63%) in four accessions. No correlation was found between results of the froth test and Liebermann-Burchard colorimetric test for saponins.
