The state of current knowledge of malic acid utilisation in the food industry, pharmacy, and other industrial spheres is given. Malic acid is used as a food and drink acidulant. It is produced commercially by two processes - either by chemical synthesis via catalytic hydration of maleic or fumaric acid, or by enzymatic conversion of fumaric acid to L-malic acid through the fumarase-containing cells
