Characteristics of apple pomace drying

The pomace made of Kronselska variety apples was dried under conditions of natural convection from 83% initial moisture content at drying temperatures 60, 70, 80, 90, 100 deg C. The effect of air temperature on drying rate in the 1st and 2nd periods as well as on the water diffusion coefficient was determined. The results were presented in form of diagrams and correlation equations
