The quality of products is a significant requirement. High quality of products is the aim present in any kind of production. This problem of quality exists not only in food industry, but also in dairy industry. Great number of components effect quality of raw milk and subsequently of dairy products. This paper deals with basic characteristics of certain parameters that influence the quality of final dairy products, examined in our and other countries.
