Microbiological quality of sheep milk produced in the Slovak Republic

Sheep milk according to its composition and physico-chemical properties is an ideal substrate for development of various types of microorganisms. Indiferent, useful, technologically undesirable and pathogenic microorganisms are taking into account. Codex Alimentarius of the SR prescribes to monitor total bacterial count (TBC) and the number of Staphylococcus aureus in sheep milk. The aim of this work was to ascertain and evaluate the microbiological quality of sheep milk with emphasis to psychrotropic, coliform and technologically useful microorganisms.
