英语. Receipts and technologies of making bakery products for cosmonaut's nutrition have been developed. Among them there are wheat rye bread (WRB), mini-cakes (MC), rolls and pancakes (PC) with fillers (cheese and ketchup (PC1) and onions (PC2)). WRB is made on a specially fermented brew, which serves as a basis to knead sourdough and dough. To retard hardening the WRB receipt is added with an enzyme of Novamil. Rolls are made with a filling of apple butter and baked condensed milk. The weight of rolls is 54-66 g. MC are made on raising agents and pressed yeasts. A fermented broth is used to prepare an yeast MC. It is made in 2 steps: in step a brew of flour and boiling water is made (1.0:1.5). In step 2 after cooling to t 32-34 deg. Ca pressed yeast is added to the brew. Fermentation lasts 60 min. the weight of MC is 35.5-44.5 g. the shelf life of rolls and MC is 3 months. PCs are prepared on a brew (5% flour) and sourdough (20% flour). A brew is made at t 68-70 deg C for 2.0-2.5 h, and a sourdough at t 27-29 deg. C for 8-10 h. The dough is kneaded at t 26-30 deg. C. the dough is fermented for 45-60 min to acidity of 5.5 deg. T (PC1) or 4.0-4.5 deg. T (PC2). Finished PC having a weight of 48-56 g are packed in a combined film based on polyethylene terephthalate polyethylene film + polyethylene film of 100 micron thick. To prevent microbiological spoilage, PCs are subjected to a 2-step thermal treatment at t 100-110 deg. C. After storing PCs for 4 months under experimental conditions the moisture content of PC2 and PC1 reduced from 37 and 38 to 30 and 32%, and the acidity grew from 3 and 4 to 4.4 and 5 deg. T, respectively being within the requirements of statutory documents. On the basis of the tests conducted the technical documentation "Special purpose bakery products. Pancakes. Specifications 9115-489-05747152-2014" was developed, approved and agreed.

俄语. Разработаны рецептуры и технологии приготовления хлебобулочных изделий для питания космонавтов. Среди них пшенично-ржаной хлеб (ПРХ), мини-кексы (МК), рулеты (РЛ) и лепешки (ЛП) с наполнителями (с сыром и кетчупом (ЛП1) и с луком (ЛП2)). ПРХ готовят на специальной заквашенной заверке, на основе которой замешивают опару и тесто. Для замедления черствения в рецептуру ПРХ включают фермент Новамил. РЛ готовят с начинкой из яблочного повидла и вареного сгущенного молока. Масса РЛ – 54-66 г. МК готовят на разрыхлителях или на прессованных дрожжах. При производстве дрожжевого МК используют выброженный полуфабрикат. Его готовят в 2 этапа: на 1-м этапе готовят заварку из муки и кипящей воды (1,0:1,5). На 2-м этапе после охлаждения до t 32-34 град. C в заварку вводят прессованные дрожжи. Брожение длится 60 мин. Масса МК – 35,5-44,5 г. Срок годности РЛ и МК составляет 3 мес. ЛП готовят на заварке (5% муки) и опаре (20% муки). Заварку готовят при t 68-70 град. C в течение 2,0-2,5 ч, а опару – при t 27-29 град. C в течение 8-10 ч. Тесто замешивают при t 26-30 град. C. Брожение теста ведут в течении 45-60 мин до кислотности 5,5 град. T (ЛП1) или 4,0-4,5 град. T (ЛП2). Готовые ЛП массой 48-56 г упаковывают в комбинированную пленку на основе полиэтилентерефталатаполиэтелена + полиэтиленовую пленку толщиной 100 мкм. Для предотвращения микробиологической порчи ЛП подвергают 2-ступенчатой тепловой обработке при t 100-110 град. C. После хранения ЛП в течение 4 мес. в экстремальных условиях влажность ЛП2 и ЛП1 снижалась с 37 и 38 до 30 и 32%, а кислотность росла с 3 и 4 до 4,4 и 5 град. T соответственно, что находилось в пределах требований нормативных документов. На основании проведенных испытаний разработали, утвердили и согласовали техническую документацию "Изделия хлебобулочные специального назначения. Лепешки. ТУ9115-489-05747152-2014".
