The changes occurring in moisture, thiamine, riboflavin niacin,phosphorus, iron and calcium in pomfrets, surmai and mackerelfrozen, glazed with ascorbic acid. citric acid, sodium chloride &glucose and sodium nitrite and kept under frozen storage were studiedupto 6 months and results reported.
