Possibilities for an objective quality evaluation of beef carcasses

The methods and techniques developed worldwide in view of an objective quality evaluation of cattle carcasses are presented. This paper shows a new way of finding an objective method of evaluation of cattle carcass. The mathematical and statistic study led to development of a method with quality determined both by carcass weight and suet percentage. Two variants of this approach and further possibilities for the use of the method are also presented
