Yeast ghost and microcristalline cellulose biosorbents positively influence ethanol formation by species of the genera Saccharomyces and Schizosaccharomyces. Other accompanying species are seldom influenced. L-malic acid decomposition is influenced to a very little extent only. Volatile acid formation, on the other hand, is markedly decreased in the presence of biosorbents, first of all by Saccharomyces sp.
