فرنسي. Ce memoire traite de la determination des conditions de mouture et de panification du triticale et de l'appreciation du melange du triticale-ble tendre et triticale-ble dur. Trois varietes de triticale, deux de ble tendre et deux de ble dur font l'objet de l'etude. Les procedures standards etablies pour la cuisson du pain de ble ont ete modifiees pour obtenir du pain satisfaisant a partir des farines de triticale.
