[Screening of lactic acid bacteria from the point of view of important probiotic properties]

We investigated probiotic properties of several strains of the following lactic acid bacteria: Lactobacillus acidophilus, L. casei casei, L. delbrueckii bulgaricus, L. helveticus, L. kefir, L. plantarum, L. reuteri, L. rhamnosus, L. sake and Streptococcus thermophilus. Bacteriocins are produced only by the strain L. acidophilus LA 5, an enhanced production of beta-galactosidase was observed in the strains LB 2.8, LB 11842, LH 211, LA A82, ST 143. Only one of the strains producing high quantities of beta-galactosidase was tolerant to low acidity and bile salts at the same time: Lactobacillus sp. 2.8.
