In this study the accent lays upon the development of food and flavour industries. Problems concerning the dependence between quantity and quality of raw materials produced and economical efficiency of processing factories have been discussed. Some starting positions have been given for the raw material bazis rationalization and for the improvement of the relations between agriculture and food and flavour industries.
