Evaluation of disposition for oxidation of bacon fat under consideration of fatty acid pattern and vitamin E concentration

German. 2 Versuche mit 60 Mastschweinen. 0-3 Wo. vor dem Schlachten wurde 1 g Vit.E/Tag verabreicht. Versuch 1: Getreidemischungen mit 10% Rapssamen bzw. 20% Sojaschrot, Versuch 2: Getreide-Sojaschrotmischung und 2% Rapsoel. Der Rueckenspeck spiegelte die Futterfett-Zusammensetzung im Fettsaeurenmuster weitgehend wider, der Vit.E-Gehalt war nach Vit.E-Gabe erhoeht. Unter Beruecksichtigung der Oxidationsprodukte und des Vit.E-Gehaltes im Rueckenspeck sind Aussagen zur Oxidationsneigung des Fettes moeglich.
