The analyzed sort of garlic "Jesenjak" contains significant quantity of various mineral substances. The greatest share of the total ash of the analyzed fresh garlic, garlic juice, and pulverized garlic represent potassium (35.42-42.28) and phosphorus (10.80-12.45). Garlic contains more potassium, phosphorus and iron than other vegetables and fruits, and therefore garlic is an important source of mineral substances, especially potassium and phosphorus.
