[Evaluation of pork sides' lean meat content by the VIA method with regards to the selected carcass quality parameters]

The influence of genotype, sex, body weight and growth intensity on the lean meat content (LMC) was studied on three breed cross pigs. The LMC was determined by Video Image Analysis. The LMC was influenced by genotype, sex, carcass weight and side weight. The LMC was higher in gilts by 6.05 % than in barrows. The meat content decreased with increasing carcass and side weights. The increase of growth rate led to a decrease of meat:fat ratio.
